BLUEBERRY BANANA MIRACLE PANCAKES

These pancakes are so delicious it should be illegal. Welcome to my morning breakfast every. single. weekend. There is something to be said about waking up on a bright Saturday morning to the smell of blueberry pancakes and coffee. Not to mention, these are completely dairy, soy, and refined-sugar free.
If we are getting into the nitty-gritty, these are not technically Whole30 as re-creating any dessert items is "off-limits" (I'm not here to stop you).

What you need:
For the pancakes:
- 1 large extra ripe banana
- 1 whole egg
- 1/2 cup of fresh or frozen blueberries
- 1 scoop of protein (I use ALOHA vanilla protein)
- 1 scoop of Vital Protein Collagen Peptides
- 1 tsp Cinnamon
- 1 tbs Chia Seeds
Recommended toppings:
- All of the almond butter
- Sliced banana
- Coconut flakes
- Even more cinnamon (can you ever have enough?)
Side recommendations:
- Bulletproof coffee (blended coffee w/ coconut oil & almond milk)

1. Heat pan on medium high with coconut oil.
2. In a bowl, mash banana, egg & scoop of protein until texture becomes smooth. Add a dash of almond milk.
3. Add in the blueberries, collagen, cinnamon and chia seeds and stir.
4. Pour mixture into pan to to create mini-pancakes.
5. These cook pretty fast - so make sure to flip them after a couple minutes and make sure they are nice and toasty on both sides.
5. Stack pancakes on a plate and add ALL of the toppings.
6. Take a pretty picture! And remember, a balanced diet consists of a pancake in each hand.
